Meatballs In Vita Nuova Italian Tomato Basil

2/3 cup fresh breadcrumbs
1/4 cup milk
1/2 cup minced onion
1/4 cup extra virgin olive oil
1 pound lean ground beef or ground turkey
1 egg lightly beaten
4 tablespoons grated Parmesan
2 tablespoons minced fresh parsley
2 garlic cloves, finely minced
Salt & pepper
2 cups Vita Nuova Italian Basil Sauce

In a small bowl, soak the breadcrumbs in milk. In a skillet over medium heat, cook the onion in 2 tablespoons of the oil, stirring, for 3 minutes. In a large bowl, combine the onion mixture with the softened bread crumbs and milk, the beef or turkey, egg, Parmesan, parsley, garlic, salt, and pepper. Form the mixture into meatballs about 1 1/2 inches in diameter.

In a large skillet over medium heat, warm the remaining 2 tablespoons of oil until hot. Add the meatballs and cool them, turning occasionally, until brown on all sides, about 10 minutes in all. Add the Vita Nuova Italian Basil Sauce to the skillet and bring in it to a simmer, stirring. Simmer for 5 minutes. If desired, serve over 1 pound of pasta.
